3 tablespoon frozen orange juice concentrate, thawed
2 tablespoon reduced-sodium soy sauce
2 tablespoon water
3/4 teaspoon cornstarch
1/4 teaspoon garlic powder
nonstick cooking spray
2 carrots, cut crosswise into 1/4-inch slices
1 package (12-oz) frozen broccoli and cauliflower florets, thawed
2 teaspoon canola oil
3/4 lb boneless skinless chicken breasts, cut into bite-size pieces
1 1/3 c hot cooked rice


 
  1. For sauce, stir together orange juice concentrate, soy sauce, water, cornstarch and garlic powder in small bowl; set aside.
  2. Spray nonstick wok or large skillet with cooking spray.
  3. Add carrots; stir-fry over high heat 1 minute.
  4. Add broccoli and cauliflower; stir-fry 2 to 3 minutes or until vegetables are crisp-tender.
  5. Remove vegetables from wok; set aside.
  6. Add oil to wok.
  7. Stir-fry chicken in hot oil 2 to 3 minutes or until cooked through.
  8. Push chicken up side of wok.
  9. Add sauce; cook and stir until boiling.
  10. Return vegetables to wok; cook and stir until heated through.
  11. Serve over hot cooked rice.
